Ingredients for Profiteroles:

For Choux Pastry:

  • 125 ml water
  • 50 g butter
  • 60 g flour
  • 2 large eggs

For Chocolate Filling:

  • 125 g chopped chocolate
  • 60 ml cream
  • 50 g butter
  • 2 egg yolks
  • Rum to taste

For Cream Filling:

  • 275 ml water
  • 275 g sugar
  • 1 heaped tablespoon cocoa
  • 75 g chopped chocolate
  • 125 ml cream
  • 2 tablespoons butter

Method:

  1. Choux Pastry Preparation:
    • Combine water and butter in a saucepan and bring to a boil.
    • Add flour, stirring continuously until the mixture pulls away from the sides of the pan.
    • Gradually beat in eggs, ensuring a smooth consistency.
    • Pipe the dough into small rounds on a damp baking sheet.
    • Bake at 200°C for 20 minutes until the pastries rise and turn golden brown.
    • Once baked, pierce each pastry to release steam, then return them to a low oven to dry out.
  2. Making the Chocolate Filling:
    • Melt chocolate together with cream and butter in a pan.
    • Once melted, stir in the egg yolks and add rum to taste.
    • Pipe this filling into the cooled profiteroles, along with the whipped cream.
  3. Preparing the Chocolate Sauce:
    • In a separate pan, prepare a sugar syrup by boiling water, sugar, cocoa, and cream for 5 minutes.
    • Add the chopped chocolate and butter, stirring until smooth.
    • Serve this rich sauce over the filled profiteroles and enjoy.
