Ingredients:
- 300 grams of tofu
- 4 tablespoons of oil
- 2 garlic cloves, finely chopped
- 2 tablespoons of ground cumin
- 2 tablespoons of coriander powder
- 2 teaspoons of turmeric powder
- 1 tablespoon of red chili powder
- Salt to taste
- 2 tablespoons of lemon juice
- 1 cup of vegan yogurt
- 6 multigrain wraps
- 1/2 cup of sliced onions
- 1/2 cup of sliced tomatoes
- 1/2 cup of cucumber
- 4-5 lettuce leaves
Method:
- In a bowl, combine oil, vegan yogurt, finely chopped garlic, ground cumin, coriander powder, turmeric powder, red chili powder, salt, and lemon juice. Mix well to create the marinade and set it aside.
- Cut the tofu into small pieces and add them to the marinade. Ensure all pieces are well-coated and allow the tofu to marinate for at least 45 minutes to an hour.
- Heat some oil in a pan and cook the marinated tofu pieces until they are light brown and slightly crispy, which should take around 20-25 minutes.
- Warm the multigrain wraps or rotis on a tawa. Place a spoonful of cooked tofu in the center of each wrap, then top with sliced onions, tomatoes, cucumber, and lettuce.
- Tightly roll the wrap, cut it in half, and use a toothpick to hold the ingredients in place. Serve immediately with mint yogurt chutney for an extra burst of flavor
