Ingredients for the Inner Almond Log:

  • 1 cup almond flour
  • 1/2 cup grated jaggery
  • 2 tablespoons milk powder
  • 2-3 tablespoons milk
  • 2 tablespoons chopped almonds
  • 2 tablespoons chopped cashews
  • 1 teaspoon ghee

Ingredients for the Outer Fig Layer:

  • 1 1/2 cups chopped dried figs
  • 1 teaspoon ghee

Ingredients for Coating:

  • 2 tablespoons poppy seeds (optional)

Method to Prepare the Inner Almond Log:

  1. In a kadai, melt the jaggery on low heat.
  2. Add almond flour, milk powder, chopped almonds, cashews, and ghee to the melted jaggery.
  3. Pour in milk and cook the mixture on low heat, stirring continuously until it forms a soft, slightly sticky dough.
  4. Remove from heat, let it cool slightly, shape into a log (about 6-8 inches long), and set aside to cool completely.

Method to Prepare the Outer Fig Layer:

  1. In the same kadai, add chopped figs and ghee.
  2. Cook on low heat, stirring frequently, until figs soften and most moisture evaporates, forming a soft, pliable dough (about 8-10 minutes).
  3. Remove from heat and let the fig mixture cool completely.

Method to Assemble the Anjeer and Badam Roll:

  1. Once cooled, place the fig dough between two sheets of parchment paper or plastic wrap, and roll it out evenly into a rectangle (about 1/4 inch thick).
  2. Place the almond log at one end of the rolled fig layer.
  3. Gently roll the fig layer over the almond log, pressing lightly to encase the almond mixture completely. Seal the edges well to keep the filling intact.
  4. Let the roll set at room temperature for about 15-20 minutes.

Method to Finish and Serve:

  1. Roll the log in poppy seeds to coat the outside, adding a lovely texture.
  2. Slice the roll into 1/2-inch thick rounds and serve.
