Ingredients:
- 3 Eggs
- 250 grams Mascarpone cheese
- 150 grams Sugar
- 3 Long espresso coffees
- 6 Ladyfinger biscuits
- Cocoa powder (to taste)
Method:
- Begin by preparing the espresso coffee and letting it cool in a bowl. Horizontally cut the ladyfinger biscuits in half.
- Separate the egg yolks from the whites, placing them in two separate bowls, each about 2 liters in size.
- Add 100 grams of sugar to the yolks and whip them with a whisk or electric beater until the mixture becomes frothy. Incorporate the mascarpone cheese and continue stirring for a few more minutes.
- Add the remaining sugar to the bowl with the egg whites and beat until stiff.
- Gently combine the contents of both bowls using a whisk.
- Prepare four small bowls, each about the size of a cappuccino coffee cup with a wide upper rim. Fill each bowl about a quarter full with the cream mixture. Quickly dip the ladyfinger halves in the cooled coffee and layer three pieces over the cream in each bowl. Cover with more cream and sprinkle cocoa powder on top.
