Ingredients:
- 1 Cup Mixed vegetables, chopped
- 1/2 cup Plain yogurt
- 1 1/2 tbsp Tandoori masala
- 1 tsp Ginger-garlic paste
- 1 tbsp Lemon juice
- Salt to taste
- 2 tbsp Oil
- 4 Whole wheat flour parathas
- 1 large Onion, sliced
- 1 Tomato, sliced
- 3-4 Lettuce leaves
- 3 tbsp Hot and Sour sauce
Method:
- In a mixing bowl, combine yogurt, tandoori masala, ginger-garlic paste, lemon juice, and salt. Stir the mixture well.
- Add the chopped mixed vegetables to the marinade and mix thoroughly. Let it sit for at least 30 minutes to absorb the flavors.
- Heat a pan and add a little oil. Once the oil is hot, add the marinated vegetables. Cook until the vegetables soften, making sure to stir frequently to prevent the yogurt marinade from sticking to the pan.
- While the vegetables cook, warm the parathas on a skillet until soft and flexible.
- To assemble the roll, place a layer of lettuce on each paratha, followed by the cooked veggies. Add fresh slices of onion and tomato, then drizzle some hot and sour sauce over the top. Roll it up and enjoy your Tandoori Veg Kathi Roll!
