1. Crispy Rose Cookies

Ingredients:

  • ½ kg refined flour (maida)
  • 1 cup coconut milk
  • 250 grams rice flour (optional)
  • 200 grams sugar
  • 6 beaten eggs
  • ½ teaspoon salt
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • Oil for deep frying

Method:

  1. Blend refined flour, rice flour, coconut milk, sugar, eggs, salt, vanilla essence, and baking powder to form a smooth, thick batter.
  2. Heat oil in a pan and dip a rose cookie mold in hot oil.
  3. Once heated, dip the mold halfway into the batter and immediately immerse it in the hot oil.
  4. Fry the cookies until they turn golden and separate them from the mold by shaking gently.
  5. Repeat the process with the remaining batter. Serve and enjoy.

2. Rose Barfi

(Recipe by Chef Tarla Dalal)

Ingredients:

  • 1½ cups crumbled paneer (cottage cheese)
  • ½ cup crumbled mava (khoya)
  • 5 tbsp powdered sugar
  • A few drops of rose essence
  • 4 to 5 drops of edible red color
  • 10 almonds (for garnish)

Method:

  1. Mix paneer, khoya, and sugar in a bowl.
  2. Divide the mixture into two portions; add red color to one portion and mix well.
  3. Spread the white mixture evenly in a plate and layer the pink mixture on top.
  4. Refrigerate for an hour, cut into diamond shapes, and garnish with almonds. Serve chilled.

3. Rose Phirni Tart

Ingredients:

  • ½ cup rose syrup
  • 2 tbsp dried rose petals
  • 2 tbsp soaked rice
  • 5 cups milk
  • 3 tbsp sugar
  • 5-6 almonds, slivered
  • ¼ tsp cardamom powder
  • 2 tart shells
  • Pistachios, gulkand balls, and gold varq for garnish

Method:

  1. Grind the soaked rice coarsely and cook in milk for 8-10 minutes, stirring continuously.
  2. Add rose syrup, sugar, rose petals, almonds, and cardamom powder. Let it cool.
  3. Fill the tart shells with the prepared phirni and garnish with pistachios, gulkand, and gold varq. Serve chilled.

4. Rose Kheer

Ingredients:

  • 750 ml milk
  • ¼ cup rice
  • ¼ cup chopped nuts
  • 2 tbsp ghee
  • 2 tbsp condensed milk
  • ¼ cup khoya (mawa)
  • Cardamom powder
  • Sugar
  • Few drops of rose syrup
  • 2 tbsp rose petal jam

Method:

  1. Soak rice and chop nuts. Heat ghee in a pan.
  2. Boil milk, add drained rice, and cook until soft.
  3. Toast nuts in ghee until golden brown.
  4. Add condensed milk, khoya, cardamom powder, and sugar.
  5. Stir in rose syrup and rose petal jam for a vibrant pink hue.
  6. Layer kheer with rose petal jam, syrup, and nuts in glasses. Serve garnished with edible flowers.

5. Rose Halwa

Ingredients:

  • 3 cups rose syrup
  • Pinch of salt
  • ¼ cup ghee
  • 1 cup cornstarch
  • 1½ cups water
  • ¾ cups mixed nuts (almonds, cashews, pistachios)
  • Ghee for greasing
  • Pistachios and rose petals for garnish

Method:

  1. Mix rose syrup, salt, ghee, cornstarch, and water in a bowl.
  2. Heat in a pan, stirring continuously until thick.
  3. Add nuts and mix well.
  4. Transfer to a greased tray, let it set for 30 minutes, and cut into pieces.
  5. Garnish with pistachios and rose petals before serving.
