1. Mango Saffron Kheer
Mango Kheer is a creamy dessert infused with the aromatic flavors of saffron, offering the perfect balance of sweetness and richness.
Ingredients (Serves 4–5):
- 1/4 cup Zeera Samba rice
- 1 litre full cream milk
- 1/2 cup condensed milk
- 1/2 cup mango puree (preferably Alphonso or Badami mango)
- 2–3 tbsp sugar (adjust to taste)
- A pinch of saffron soaked in 2 tbsp warm milk
- 1/2 tsp cardamom powder
- 6–8 cashew nuts
- 6–8 almond slivers
- A few raisins
- 1 tbsp ghee
Method:
- Rinse and soak Zeera Samba rice for 30 minutes. Drain and lightly crush the grains.
- Boil milk in a thick-bottomed pan, then add rice and cook on low heat, stirring occasionally.
- Add sugar, condensed milk, cardamom powder, and saffron milk. Simmer for 5–7 minutes.
- Sauté cashews, almonds, and raisins in ghee until golden, then add them to the kheer.
- Cool the kheer slightly, then fold in the mango puree.
- Chill for an hour before serving, garnished with saffron strands, chopped nuts, and mango puree.
2. Aam Panna
A classic summer drink, Aam Panna is made from raw mangoes, jaggery, and spices for a tangy and refreshing beverage.
Ingredients (Serves 4–5):
- 2 large raw mangoes (preferably Totapuri or local variety)
- 4 tbsp jaggery or raw cane sugar
- 1/2 tsp black salt
- 1/2 tsp roasted cumin powder
- 1/2 tsp black pepper powder
- A pinch of hing (optional)
- 2 tbsp fresh mint leaves, chopped
- 4 cups chilled water
- Ice cubes
Method:
- Pressure cook mangoes until soft and pulpy.
- Extract the pulp and strain it for smoothness.
- Mix mango pulp with jaggery, spices, and mint. Add chilled water and adjust sweetness or spice.
- Serve in tall glasses with ice cubes, garnished with mint sprigs and mango slivers.
3. Mango Green Tea Popsicles
These Mango Green Tea Popsicles combine the refreshing taste of green tea with the sweetness of mango in a cool frozen treat.
Ingredients for Green Tea Layer:
- 1 tsp Matcha Green Tea Powder
- 2/3 cup full-fat coconut milk
- 1–1.5 tsp maple syrup or honey
Ingredients for Mango Layer:
- 1 cup fresh mango, cubed
- 1/4 cup light coconut milk
- Juice of ½ lemon
Method:
- Blend the green tea layer ingredients and pour into popsicle moulds. Freeze for 30 minutes to set.
- Blend the mango layer ingredients and pour over the green tea layer. Freeze for at least 4 hours.
4. Green Mango Margarita
This tangy and refreshing cocktail made with green mango, tequila, and Cointreau is perfect for summer evenings.
Ingredients:
- 60 ml tequila
- 30 ml Cointreau
- 45 ml green mango puree
- 15 ml fresh lime juice
- A dash of agave syrup (optional)
- Ice cubes
Method:
