Chicken lollipops are a popular appetizer that packs a punch of flavor with every bite. These spicy, garlicky, and crispy treats are sure to be a hit at any gathering.

Ingredients:
- Chicken:
- 6 full-size chicken wings
- ½ kg chicken drumsticks
- For Frying:
- 2 cups vegetable oil (500 ml)
- For the Marinade:
- 20 grams ginger, finely chopped
- 20 grams garlic, finely chopped
- 10 grams green chillies, chopped
- ½ tablespoon ajinomoto
- For the Batter:
- 1 cup cornflour
- 1 tablespoon white pepper
- 1 tablespoon salt
- ½ tablespoon food color (optional)
- 1 egg
Method:
- Combine all marinade ingredients in a bowl and mix well. Set aside.
- Cut each chicken wing into three parts along the joints, discarding the wing-tip or saving it for stock.
- For the drummet (the meaty upper part with one bone), cut around the thin end to disconnect the meat from the bone, then push the meat down to form a lollipop shape.
- For the winglet (the middle part with two bones), separate the bones, cut around both ends, remove the thinner bone, and push the meat to one end of the remaining bone to create a lollipop.
- Place the prepared chicken lollipops in the marinade, stir, cover, and refrigerate for at least one hour.
- Mix all batter ingredients until smooth and lump-free.
- Dip the meat end of each chicken lollipop into the batter.
- Heat the oil in a medium pot to 170°C (340°F). Deep fry the chicken for about 5 minutes or until the batter turns golden brown and the chicken is fully cooked.
Serve warm with ketchup or hot sauce and enjoy!
