- 1 cup curd
- 1/2 tsp roasted cumin powder
- 1/4 tsp red chili powder
- 1/4 tsp chaat masala
- 3/4 to 1 tbsp sugar (adjust for sweetness)
- 2 tsp chopped coriander leaves
- 1/2 tsp coriander powder
- 1/4 tsp dry ginger powder or minced ginger
- 2 tsp cornstarch (cornflour)
- 1/4 tsp chaat masala powder
- Salt to taste
Method:
- Whisk 1 cup of curd until smooth. Add 1/2 tsp roasted cumin powder, 1/4 tsp red chili powder, 1/4 tsp chaat masala, 3/4 to 1 tbsp sugar, and 2 tsp chopped coriander leaves. Mix well and refrigerate.
- Grate carrots, chop onions, and add salt in a bowl. Set aside.
- Steam and peel three medium-sized potatoes. Grate them and mix with 1/2 tsp Kashmiri red chili powder, 1/2 tsp coriander powder, 1/2 tsp cumin powder, 1/4 tsp dry ginger powder, 2 tbsp cornstarch, 1/4 tsp chaat masala, and salt. Form tikkis and shallow-fry until golden brown.

- 4 rotis
- 2 tbsp butter
- 3 tbsp green chutney
- 10 mushrooms
- 1/2 cup thinly sliced onions
- 1/4 cup grated carrots
- 1 cup shredded cabbage
- 1/4 tsp ginger garlic paste
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 1/4 tsp coriander powder
- 1/2 tsp garam masala powder
- 3 tbsp curd
- 1 tsp salt
Method:
- Thinly slice onions and capsicum, chop mushrooms. Mix diced mushrooms with curd, red chili powder, coriander powder, garam masala, turmeric powder, and salt. Let it sit until the mushrooms darken.
- Heat oil in a pan, add ginger garlic paste, and sauté until the smell dissipates. Add the mushroom mixture and cook on medium heat for 10 minutes. Set aside.
- Butter the chapati and spread green chutney. Place the veggies and mushroom mixture on top. Roll tightly and wrap with butter paper at the bottom.

- 1/4 tsp turmeric powder
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala powder
- 1/2 tsp dry mango powder (amchur powder)
- 1/4 tsp chaat masala powder
- 1 tsp Kashmiri red chili powder
- Black salt
- 6 tbsp hung curd
- 1 tsp lemon juice
- 200 grams paneer, cubed
- 1/2 cup coriander leaves
- 1/2 cup mint leaves
- 1 green chili
- 1-2 garlic cloves
- 1 onion
- 1 cabbage
- 3 carrots
- 3 capsicums
Method:
- Mix hung curd with ginger-garlic paste, ajwain, turmeric powder, coriander powder, cumin powder, garam masala powder, amchur powder, chaat masala powder, Kashmiri red chili powder, and black salt. Add lemon juice and mix again. Marinate paneer cubes in this mixture.
- Blend coriander leaves, mint leaves, green chili, chaat masala, cumin powder, ginger, and garlic for green chutney. Add hung curd and blend until smooth.
- Slice onions, shred cabbage, grate carrots, and slice capsicum. Season with chaat masala, red chili powder, salt, and lemon juice.
- Knead dough and make rotis.
- Cook marinated paneer cubes without overcooking. Place paneer chunks and veggies on a roti. Pack green chutney separately for dipping.
