Children are constantly on the go, and it’s no surprise that they’re often hungry even after meals. Sometimes their meals just don’t seem to keep them full. Rice-based dishes are an excellent alternative, providing long-lasting energy from the carbohydrates. One-pot rice meals are flavorful, filled with vegetables and spices, and easy to eat with a spoon, reducing the mess. Plus, rice meals are a great option for parents concerned about hygiene, as they minimize hand contact. Here are some rice recipes you should try.

Peanut Rice (Recipe by Aarthi)

Peanut rice is a crunchy, protein-packed meal.

Ingredients:

  • Rice
  • Peanuts
  • Red chili
  • Sesame seeds
  • Coconut
  • Salt

Method:

  1. In a pressure cooker, add rice and water. Cook for 2 minutes until the first whistle, then let it simmer for another 5 minutes. Turn off the heat and set aside.
  2. Roast peanuts in a dry pan over medium heat for 5 minutes. Add red chili and roast for another 5-10 minutes. Add sesame seeds and chopped coconut, roasting until golden brown. Let the mixture cool, then grind in a blender.
  3. In a separate pan, heat oil and sauté the ground mixture. Add the cooked rice and stir well. Season with salt and garnish with powdered peanuts.

Potato Rice (Recipe by Swathi)

Potato rice is a delightful one-pot meal.

Ingredients:

  • Rice
  • Onion
  • Garlic
  • Ginger
  • Potatoes
  • Red chili powder
  • Garam masala
  • Turmeric
  • Mint leaves
  • Salt
  • Lemon
  • Black pepper

Method:

  1. Cook the rice without making it mushy.
  2. In a heated pan, add spices like cumin, cardamom, and bay leaf. Let them sizzle in the oil for a minute. Add garlic, ginger, and chopped onions. Stir until the onions turn transparent.
  3. Add cubed potatoes and stir-fry until soft. Add red chili powder, garam masala, turmeric, mint leaves, and salt. Sauté for 2 minutes, then add the cooked rice. Stir well and serve with lemon juice and salt to taste.

Beetroot Rice (Recipe by Swathi)

Beetroot rice is nutritious and healthy.

Ingredients:

  • Rice
  • Beetroot
  • Onion
  • Green chili
  • Turmeric
  • Green peas
  • Potatoes
  • Coriander leaves
  • Mint leaves
  • Ginger garlic paste

Method:

  1. Cook the rice.
  2. In a pressure cooker, heat oil. Add 1/2 tsp cumin, bay leaves, 1 cinnamon stick, 2 cloves, and 2 cardamoms. When they start to sizzle, add onions and chilies. Stir until the onions are golden brown. Add 1/2 tsp ginger garlic paste and fry.
  3. Add chopped potatoes, beetroots, peas, coriander, and mint leaves. Stir and fry for 2 minutes.
  4. Pour water, add salt, and mix in the cooked rice. Cook for 1 whistle on medium heat.
