Ingredients (Serves 2 Medium)
- 750 gms Boneless Mutton
- 1/2 cup Oil
- 2 medium Tomatoes Puree
- 1 small Onion Puree
- 1 tbsp Ginger Paste
- 1 tsp Garlic Paste
- 3-4 Green Chillies (slit)
- 1 inch Cinnamon Stick
- 2-3 Cloves
- 1 tsp Coriander Powder
- 1/2 tsp Red Chilli Powder
- 1/2 tsp Turmeric Powder (Haldi)
- Salt to taste
Method
- Wash and pat dry the mutton chunks, then mix in garlic paste and let it marinate briefly.
- Heat oil in a karahi, add the cinnamon stick and cloves. Fry the mutton for about 10 minutes until the color changes. Then add ginger paste and green chillies and continue frying.
- Add coriander powder, red chilli powder, turmeric, and some salt. Fry until the spices are aromatic.
- Mix in the tomato and onion puree and cook until the masala releases oil and the flavors meld.
- Add a little water, cover the karahi, and simmer until the mutton is soft and tender. Adjust salt as needed.
- Remove from heat, garnish with ginger juliennes, and serve hot with naan or parathas.
