Ingredients
- 1 cup whole wheat flour (atta)
- 1/2 cup split yellow moong dal (dhuli dal)
- 1 green chili, finely chopped
- 1/2 tsp cumin seeds (jeera)
- A pinch of asafoetida (hing)
- 1/2 tsp turmeric powder (haldi)
- 1/4 tsp fennel seeds
- 1/4 tsp nigella seeds (kalonji)
- 1/2 tsp garam masala
- 1 tsp red chili powder
- Fresh coriander leaves, chopped
- Oil or ghee as needed
- Salt to taste
Method
- Wash the moong dal thoroughly and soak it in water for a few hours until soft.
- Drain the excess water and combine the soaked dal with flour, spices, green chili, and coriander leaves in a mixing bowl.
- Gradually add water to form a smooth and pliable dough. Cover with a damp cloth and let it rest for 30 minutes.
- Apply a little ghee and knead again. Divide the dough into equal portions and roll each portion into a round flatbread.
- Heat a tawa or skillet on low-medium flame. Cook each paratha on both sides until golden brown, brushing with ghee while cooking. Serve hot and enjoy a crispy Rajasthani treat.
