Thai Chicken Fried Rice is a beloved dish in Thailand, often enjoyed as a side with Thai curries or as a standalone meal. This flavorful recipe can be customized with any protein, making it perfect for a quick and satisfying lunch or dinner. Ingredients (Serves 2)
- 4 cups cooked rice
- 1/2 cup chopped spring onions
- 2 eggs
- 2 tbsp vegetable oil
- 1/4 cup chopped mushrooms
- 200 grams chicken breast, chopped
- 3 tbsp chicken stock
- 1 tbsp lemon juice
- Black pepper or white pepper to taste
- 1 tsp chopped garlic
- 1 thinly sliced red or green chili
- 1/4 cup frozen peas
Method
- Heat the vegetable oil in a pan and lightly toss the cooked rice to remove lumps.
- In a mixing bowl, combine the chopped chicken with 1 tbsp soy sauce and set aside.
- In another bowl, mix fish sauce, chicken stock, soy sauce, lemon juice, sugar, and pepper to make the stir-fry sauce.
- Heat oil in a large skillet, sauté garlic, spring onions, and chili until fragrant.
- Add the chicken and stir-fry for 2–3 minutes, then add mushrooms and cook for another 1–2 minutes.
- Add the rice and mix thoroughly with the oil.
- Gradually add the stir-fry sauce 1–2 tablespoons at a time, stirring continuously for 7–8 minutes. Add frozen peas and mix well.
- Crack the eggs into the pan and stir-fry quickly to scramble them into the rice.
- Continue stir-frying all ingredients together over high heat for 2–3 minutes.
