Celebrity chef Harsh Dixit recently shared an interesting story about how he crafted a unique vegan twist for Virat Kohli and Anushka Sharma’s anniversary celebration. Known for his innovative approach to food, Chef Harsh created a Vietnamese-inspired dish that turned traditional Pho into a plant-based delight — complete with what he called “vegan snakes.”

The power couple, who tied the knot in December 2017 and have become icons of love and wellness, celebrated their anniversary in December 2019 with a private dinner curated by the celebrity chef. Harsh, who has cooked for stars like Ranbir Kapoor, Alia Bhatt, Janhvi Kapoor, and cricketer KL Rahul, revealed that the couple preferred gluten-free and vegan dishes at the time.

“For Virat and Anushka, I wanted something creative yet comforting,” said Harsh. “So, I reimagined Vietnamese Pho in a completely vegan way — rice noodles, vegetable broth, and a surprise element.” The surprise, he explained, was his playful take on snake meat — replacing it with snake gourd, which he stuffed with tofu, peanuts, coconut, and coriander, then smoked to perfection.

The dish was served with water chestnuts, enoki mushrooms, and chillies, simmered in a lemongrass-ginger-coriander broth, with a side of homemade chilli oil for an extra kick. “The idea was to keep it light-hearted but full of flavour,” Harsh added. “Being a private chef means you get to mix creativity with emotion — and this dish was exactly that.”

The meal became more than just dinner — it was an experience celebrating the couple’s love and their shared dedication to mindful living. The chef’s imaginative approach not only respected their vegan lifestyle but also brought a sense of playfulness to fine dining.
