  1. In a grinder, combine foxtail millet, urad dal, fenugreek seeds, and ¾ cup water. Grind into a smooth paste. Transfer to a large bowl and ferment for 6-8 hours.
  2. After fermentation, add salt and mix well.
  3. Boil water in a steamer and brush idli moulds with oil. Pour batter into each cavity. Steam for 10-12 minutes.
  4. Remove moulds, de-mould idlis, and serve hot with coconut chutney.
