This chicken curry combines the zingy flavour of traditional Indian mango pickle with tender marinated chicken. He marinates chicken in yogurt mustard oil ginger-garlic paste and aromatic spices. In Delhi Chef Sadaf Hussain gives mango a rustic spin with Aam aur Kathal ki Sabzi a home-style curry from Bihar that combines raw mango and jackfruit. The recipe includes boiling jackfruit then cooking it with mustard oil bay leaf cumin seeds hing onion garlic ginger and green chillies with an array of spices.
