Ingredients:
- 25 Limes
- 100 grams Ginger
- 700 ml Water
- 1 kg Sugar
Instructions:
Step 1: Peel the ginger, wash it thoroughly, and set it aside.
Step 2: Slice the ginger and blend it with lukewarm water. Strain the mixture to extract the juice. Repeat the process if necessary to obtain more juice.
Step 3: Let the extracted ginger juice sit for an hour until a thick white sediment forms at the bottom.
Step 4: Cut the limes and extract the juice.
Step 5: In a pan, combine the sugar and water. Heat over medium flame to make a sugar syrup, boiling until it reaches a one-thread consistency. Then, turn off the heat.
Step 6: Carefully add the ginger juice to the sugar syrup, avoiding the white sediment. Mix thoroughly.
Step 7: Allow the mixture to cool.
Step 8: Add the filtered lime juice, stir well, and transfer the cordial into bottles. Refrigerate.
To serve, mix 2 to 3 tablespoons of the cordial with soda or cold water in a glass. Stir well and enjoy your homemade ginger-lime cordial!
