Ingredients
1 cup cooked rice
1 cup curd
1/4 cup milk
1 tablespoon oil
1/2 teaspoon mustard seeds
6 to 8 curry leaves
1 small green chilli chopped
1/2 teaspoon grated ginger
1 tablespoon chopped coriander
Salt as per taste
Method
Take cooked rice in a bowl and mash it lightly while still soft. Allow it to cool completely before adding curd.
Mix curd milk and salt into the rice until it becomes smooth and creamy.
Heat oil in a small pan and add mustard seeds. Once they start to crackle add curry leaves green chilli and ginger. Cook briefly.
Pour this hot tempering over the rice mixture and combine gently.
Garnish with fresh coriander and serve chilled or at room temperature. Optional additions like grated carrot or pomegranate can enhance freshness.
