Bollywood superstar Deepika Padukone has a secret kitchen favourite – a bowl of low-calorie, restaurant-style ramen. Her private chef, Harsh Dixit, recently shared the complete recipes for the celebrity-approved noodles, broth, and toppings, making it possible for fans to recreate the magic at home.

The preparation involves several steps, but the results are worth it: alkaline noodles, rich Tori Paitan chicken broth, tender chicken roulade, flavourful Char Siu pork, and perfectly soft-boiled eggs.

Alkaline noodles
Mix flour, water, salt, and alkaline soda, knead into a smooth dough, and let it rest overnight. Roll the dough into sheets and cut into noodle strips. These noodles can be stored or cooked immediately.

Tori Paitan broth
Combine chicken bones, ginger, scallion whites, and coriander stems in a pot with water. Bring to a boil, then simmer for 4–5 hours until the broth reduces by half. Skim scum and strain before using.

Chicken roulade
Blend chicken leg meat with char siu powder and coriander stems to make a farce. Spread the mixture between two chicken breasts, roll tightly, and steam for 20 minutes. Transfer to an ice bath to stop cooking.

Char Siu pork
Rub pork belly with char siu powder and cook sous vide at 68°C for 12 hours. Rest briefly, then sear in a hot pan for extra texture.

Soft-boiled eggs
Boil eggs for six minutes, then transfer to ice water to stop cooking. Peel and season with salt for the perfect ramen topping.
