Thecha, a fiery chutney made from garlic, green chilies, and peanuts, is the star ingredient, bringing in bold flavors to the soft paneer.

Ingredients:
For the thecha:

  • 8 to 10 garlic cloves
  • 5 to 6 spicy green chilies
  • 1/4 cup raw peanuts
  • 1 tbsp cumin seeds
  • 1 tbsp sesame seeds
  • A pinch of salt
  • A handful of coriander
  • 1 tsp oil

For the tikkis:

  • 200g paneer
  • Salt to taste
  • Ghee for shallow frying

Method:
Start by heating a tawa and adding the garlic cloves, chilies, and raw peanuts. Stir until they start to blister and char, releasing an aromatic smoky fragrance. Drizzle some oil and add cumin seeds, sesame seeds, and a pinch of salt. Stir well and cook until everything becomes fragrant. Transfer the ingredients to a grinder and let them cool slightly before adding fresh coriander. Grind everything into a thick, coarse mix—not a paste. This is your flavorful thecha.

For the tikkis, grate the paneer or crumble it by hand and place it in a large bowl. Add the thecha and salt, and mix everything together. Coat your palms with a little oil and shape the mixture into tikkis. Heat some ghee in a pan and shallow fry the tikkis on both sides until they become crispy and golden brown. Be gentle while flipping them, as they will remain soft. Serve these hot with your favorite chutney or dip for an extra burst of flavor.
