Goan Chicken Croquette is a flavorful and crispy snack perfect for parties, gatherings, or as a delightful appetizer. Made with boneless chicken, aromatic spices, and a golden breadcrumb coating, this finger food can be enjoyed with dips, sandwiches, or chutneys. Ingredients
- 1/2 kg boneless chicken, washed and salted
- 2 large red onions, sliced
- 2 green chillies, finely chopped
- 2 large tomatoes, finely chopped
- 2 tsp ginger garlic paste
- 1 cup coriander leaves, chopped
- 1 tbsp cumin seeds (jeera)
- 1/2 tbsp black peppercorns
- 1 1/2 pieces cinnamon stick
- 1 1/2 tbsp turmeric powder
- 12 cloves
- 3 cardamom pods
- 2 dry red chillies (preferably Kashmiri)
- Oil for frying
- 2 soft bread slices, cut into cubes
- 2 cups breadcrumbs
- 3 eggs
Method
- Grind cumin seeds, peppercorns, cinnamon, turmeric, cloves, cardamom, and dry red chillies into a fine spice powder.
- In a heavy-bottomed pan, heat 1 tbsp oil and sauté onions, green chillies, ginger garlic paste, tomatoes, and chicken until half-cooked.
- Add 1 cup water, cover, and simmer for 10 minutes. Let it cool.
- Blend the mixture into a coarse paste.
- Transfer to a large bowl, add bread cubes, chopped coriander, and the ground spice mix.
- Beat 2 whole eggs and 1 egg yolk, reserving one egg white separately. Mix into the chicken mixture thoroughly.
- Shape the mixture into small cylinders.
- Whisk the reserved egg white to a froth.
- Dip each cylinder into the egg white and coat with breadcrumbs. Deep fry until golden brown.
- Serve hot with garlic mayo, cheesy dip, sauce, or chutney.
