Ingredients for Gongura Chicken Curry:
- 400 g chicken curry
- 1 chopped onion
- 2-3 green chillies
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp jeera
- 1/4 tsp haldi
- 80 g gongura leaves
- 2 tbsp coriander leaves
- 2 tbsp oil
- 1 tbsp ginger-garlic paste
- Salt, to taste
Method:
- Begin by thoroughly washing the gongura leaves. Cook them with green chillies, salt, and a bit of water in a pan for 4 to 5 minutes.
- Allow the mixture to cool, then grind it into a smooth paste. Heat oil in a kadhai over low-medium flame.
- Add chopped onions and sauté until golden brown. Incorporate haldi, coriander powder, jeera, and ginger-garlic paste, frying for a few seconds.
- Add the chicken pieces along with red chilli powder and salt. Mix well, cover the kadhai with a lid, and let it simmer for 8 to 10 minutes until the chicken becomes tender.
- If necessary, add more water at this stage. Once the chicken is cooked, add the gongura paste and let it simmer for another minute or two.
- Stir well and garnish with fresh coriander leaves. Serve hot and enjoy your flavorful Gongura Chicken Curry!
