The entire process takes just 35 minutes, with 10 minutes for preparation and 25 minutes for cooking. This recipe serves two and is easy to follow, making it a great option for a quick yet satisfying meal.

Ingredients:

Method:

  1. In a bowl, combine oil, vegan yogurt, finely chopped garlic, ground cumin, coriander powder, turmeric powder, red chili powder, salt, and lemon juice. Mix well to create the marinade and set it aside.
  2. Cut the tofu into small pieces and add them to the marinade. Ensure all pieces are well-coated and allow the tofu to marinate for at least 45 minutes to an hour.
  3. Heat some oil in a pan and cook the marinated tofu pieces until they are light brown and slightly crispy, which should take around 20-25 minutes.
  4. Warm the multigrain wraps or rotis on a tawa. Place a spoonful of cooked tofu in the center of each wrap, then top with sliced onions, tomatoes, cucumber, and lettuce.
  5. Tightly roll the wrap, cut it in half, and use a toothpick to hold the ingredients in place. Serve immediately with mint yogurt chutney for an extra burst of flavor
