Indulge in the exquisite flavors of Schezwan and Almond Paneer Kababs, a unique blend of spicy and nutty textures that promises to tantalize your taste buds. Ingredients:

  • 2 cups fresh paneer, crumbled
  • ½ cup potatoes, boiled and mashed
  • 4 tbsp almonds, roasted and crushed
  • 2 tbsp onions, chopped and sautéed
  • 2 green chilies, chopped
  • 1 tsp garlic, finely chopped
  • 2 tbsp Schezwan sauce
  • Salt and pepper to taste
  • Oil for deep frying

For the Batter:

  • 2 tbsp plain flour
  • 2 tbsp cornflour
  • A pinch of salt and black pepper powder
  • Water as required

For the Coating:

  • 3 tbsp almonds, coarse powder
  • 2 tbsp bread crumbs
  • 1 tbsp cornflour

For Schezwan Sauce:

  • ½ cup whole dried red chilies
  • ¼ cup oil
  • 2 tbsp garlic, finely chopped
  • 1 tbsp ginger, finely chopped
  • 2 tbsp onion, finely chopped
  • 2 tbsp celery, finely chopped
  • 4 tbsp tomato ketchup
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • ¼ tsp black pepper powder
  • Salt to taste

Method:

  1. Make the Schezwan Sauce: Soak dried red chilies in hot water until soft, blend into a paste. Heat oil, sauté garlic, ginger, and onions. Add celery, chili paste, and cook until oil separates. Add ketchup, vinegar, soy sauce, and seasoning.
  2. Prepare the Kabab Mix: In a bowl, combine crumbled paneer, mashed potatoes, crushed almonds, sautéed onions, green chilies, garlic, and Schezwan sauce. Season with salt and pepper.
  3. Form the Kababs: Shape the mixture into small balls or desired shapes.
  4. Prepare the Batter: Mix plain flour, cornflour, salt, pepper, and water to form a medium consistency batter.
  5. Coat the Kababs: Dip kababs in batter, then roll in a mix of coarse almond powder, bread crumbs, and cornflour.
  6. Deep Fry: Heat oil in a pan and deep fry the coated kababs until golden brown.
