Eid ul Adha, also known as the Feast of Sacrifice or Bakrid, is one of the two major Islamic holidays, along with Eid ul-Fitr. Falling on the 10th day of Dhu al-Hijja, the twelfth month of the Islamic calendar, Eid ul Adha is marked by three days of festivity, known as the Tashreeq days. This year, the celebration takes place on June 17 in India and June 16 in the UAE and other Arab countries.
The festival commemorates Prophet Ibrahim’s willingness to sacrifice his son Ismail as an act of obedience to Allah and follows the conclusion of the annual Hajj pilgrimage. A key tradition involves the sacrifice of cattle such as goats, sheep, or camels, and sharing the meat with family, friends, and the less fortunate. Central to the celebration are lavish meals featuring traditional dishes like mutton biryani, kebabs, chicken tikkas, and delightful desserts.

1. Sheer Kurma
A rich and creamy dessert made with vermicelli, milk, nuts, and dates. Perfect for a sweet start to your feast.
Ingredients:
- 500 ml reduced milk
- 100 grams whole wheat vermicelli
- ¼ cup sugar
- 1 teaspoon cinnamon powder
- 1 tablespoon charoli
- Saffron strands for garnish
- ¼ teaspoon nutmeg powder
- 2 tablespoons chopped mixed nuts (almonds and pistachios)
Method:
- Roast vermicelli in ghee until fragrant.
- Add milk, sugar, cinnamon powder, nutmeg powder, charoli, and nuts. Cook until thickened.
- Garnish with nuts and saffron, and serve warm.
2. Shami Kebab
Flavorful minced meat patties spiced with aromatic herbs and shallow-fried to perfection.
Ingredients:
- 500 grams boneless mutton
- 2 pieces mutton Nalli
- Various spices (bay leaves, cardamoms, peppercorns, etc.)
- Ghee for cooking and frying
- Handful of mint and coriander leaves
- 1 egg
Method:
- Prepare Shami masala by roasting and grinding spices.
- Cook mutton with spices, chana dal, and other ingredients in a pressure cooker.
- Mash cooked mutton, mix with herbs and egg, shape into patties.
- Shallow-fry until golden brown and serve with mint chutney.
3. Kaleji Masala
A spicy liver dish cooked with onions, tomatoes, and a blend of aromatic spices.

- 500g kaleji (mutton liver)

- Yoghurt, green papaya paste

- Oil for frying

- Fry sliced onions to golden brown, grind to a paste.

- 4-8 white bread slices
- 4 cups milk
- ¾ cup sugar
- Green cardamom powder

- Silver varq for garnish
Method:
- Prepare rabdi by boiling milk and adding sugar, cardamom, and pistachios.
- Fry bread slices in ghee until golden.
- Drizzle with sugar syrup, top with rabdi, garnish with silver varq and pistachios.
5. Seviyan ka Muzaffar
A traditional dessert made with roasted vermicelli cooked in milk, flavored with saffron, and garnished with dry fruits.
Ingredients:
- 200 grams roasted vermicelli
- 1¼ cup sugar
- 5 tbsps ghee
- Green cardamom powder
- Grated mawa/khoya
- Milk
- Blanched and slivered almonds and pistachios
- Silver varq for garnish
Method:
- Prepare sugar syrup by dissolving sugar in water.
- Sauté vermicelli in ghee until fragrant.
- Add sugar syrup, cardamom powder, mawa, and milk. Cook until done.
- Garnish with almonds, pistachios, and silver varq.
