Creating a Crookie can be as straightforward or complex as you prefer. You can opt for a completely homemade version by preparing croissants from scratch or choose a simpler route with store-bought croissants. Here, I share an easier recipe version for you. With a croissant in hand, you only need to prepare the cookie dough. Stuff the dough inside the croissant, place some on top, and bake. The result? A flaky, crunchy croissant with a gooey, warm cookie center and a crispy, sweet cookie crust.

  1. Preheat the oven to 180°C and line a baking tray with a silicone mat or parchment paper.
  2. In a large bowl, combine the butter and brown sugar. Whisk until light and fluffy.
  3. Add the egg to the butter-sugar mixture and beat until fully incorporated. If using vanilla, mix it in at this stage.
  4. Add the all-purpose flour, cornstarch, and baking soda. Fold them in using a whisk first, then a spatula. Do not overmix.
  5. Fold the chocolate chips into the dough.
  6. Wrap the dough in cling film and refrigerate for 15 minutes.
  7. Slice the croissant in half horizontally, leaving a hinge at the end. Cut only partway through.
  8. Place 2 tablespoons of cookie dough in each croissant and spread evenly using a spatula.
  9. Close the croissants and place an additional tablespoon of dough on top, shaping it like a croissant.
  10. Bake for 10 to 12 minutes or until the cookie dough is golden brown.
  11. Once baked, let the croissants cool for 5 to 10 minutes before enjoying warm.
