Meal prepping rice is a popular habit for saving time and improving nutrition but a medical expert is warning that improper storage can pose serious health risks. A Maryland-based physician Dr Kunal Sood has highlighted a lesser-known danger linked to cooked rice and explained how simple handling mistakes can lead to food poisoning.

Freshly cooked rice is rich in carbohydrates and can cause sharp blood sugar spikes. When rice is cooked in advance then cooled and frozen part of its starch converts into resistant starch which behaves like fibre. This process can lower calorie absorption and help stabilise blood sugar levels when reheated. While these benefits make rice a favourite for meal prep food safety remains a crucial concern.

According to Dr Sood cooked rice can contain heat-resistant spores of Bacillus cereus a bacteria that survives normal cooking temperatures. If rice is left out at room temperature for too long these spores can grow and release toxins directly into the food. Even if the rice is reheated later the toxins may still be present making the food unsafe despite looking and smelling normal.

Symptoms of this type of food poisoning often appear quickly within 30 minutes to six hours and commonly include nausea vomiting and stomach discomfort. The risk becomes higher when rice is cooled slowly stored unrefrigerated for extended periods kept for several days or reheated multiple times.

Dr Sood emphasises that prevention depends on strict control of time and temperature. Rice should be cooled rapidly after cooking spread into shallow containers and placed in the refrigerator within an hour at a temperature of 4 degrees Celsius or lower. For best safety cooked rice should be eaten within 24 to 48 hours and reheated only once until it is steaming hot throughout.

By following these simple steps people can enjoy the nutritional benefits of meal-prepped rice while reducing the risk of foodborne illness and protecting their health.
