Ingredients (Serves 4)
- 1/2 cup gatti avalakki or thick poha
- 1/2 cup sugar
- 2 cups milk
- 1 tbsp ghee
- 7-8 cashews
- 1 tbsp raisins
- A pinch of cardamom powder
Method to Make Avallaki Payasa
- Rinse the thick beaten rice (gatti avalakki) and set it aside.
- Heat ghee in a pan and add cashews and raisins. Roast until the raisins swell, then remove them and keep aside.
- Pour in milk and add sugar, stirring well. Bring it to a gentle boil.
- Add the rinsed avalakki and cook on medium heat, stirring occasionally.
- After 5 minutes, add cardamom powder and continue cooking until the rice softens, about 10 minutes.
- Switch off the stove and fold in the roasted cashews and raisins.
- Serve warm or chilled and enjoy this creamy, aromatic Avallaki Payasa.
