This saffron-infused twist adds richness to the traditional sweet, making it perfect not just for festive gifting but also as a showstopper at dinner parties. The use of dates adds natural sweetness while cardamom and cinnamon bring out deeper, aromatic layers of flavor.

Here’s how to prepare Kesariya Kaju Katli (Serves 2 | Cooking Time: 15 minutes):

Ingredients:

  • 150 gm cashew nuts
  • 30 gm dates
  • 8–9 saffron strands
  • 1 tsp cardamom powder
  • A pinch of cinnamon
  • 1 tbsp ghee
  • 1–2 edible silver leaves

Method:

  1. Begin by freezing the cashews overnight and then grinding them into a fine powder. Strain it to remove any coarse particles.
  2. Blend the dates into a smooth paste.
  3. In a pan, add a little water and the date paste. Let it melt gently.
  4. Stir in the cashew powder, saffron strands, cardamom, and cinnamon.
  5. Keep mixing continuously until the mixture thickens.
  6. Add ghee at the end and mix well until everything is well combined.
  7. Transfer the mixture onto a butter paper and roll it out evenly.
  8. Garnish the sheet with silver leaf and cut into heart-shaped pieces using a cutter.
  9. Let it cool and enjoy your rich saffron cashew fudge.
