Ingredients for French Beans Sabzi
- 250 gms French beans
- 1 large onion (finely chopped)
- 1 tomato (finely chopped)
- 1 cup grated coconut
- ½ cup peanuts
- 1-inch piece of ginger
- 4–5 garlic cloves
- 2–3 green chilies
- ½ tsp cumin seeds
- ¼ tsp mustard seeds
- ½ tsp turmeric powder
- 1 tsp red chili powder
- ½ cup tamarind pulp
- 1 tbsp grated jaggery
- Salt to taste
- 1 tbsp oil
Method to Make French Beans Sabzi
- Wash, dry, and chop French beans into half-inch pieces.
- Dry roast peanuts and grated coconut on low flame for about 5 minutes. Let it cool, then coarsely grind.
- Crush garlic, ginger, and green chilies together to make a coarse paste.
- Heat oil in a kadhai, add mustard seeds and cumin seeds, and let them splutter.
- Add chopped onions and sauté until translucent.
- Mix in the ginger-garlic-green chili paste and cook for 2–3 minutes.
- Add turmeric, red chili powder, and salt. Stir well.
- Add French beans and tomatoes, stir-fry for 5 minutes, then cover and cook for another 5 minutes.
- Pour in tamarind pulp and jaggery, stir, and cook for 2 minutes.
- Finally, add the ground peanut-coconut mixture, mix thoroughly, and serve hot with chapatis or parathas.
