Ingredients:
- 1 cup foxtail millet (kangni)
- 2 ½ cups water
- 1/2 cup milk
- 3 cups whisked curd
- 1 cup grated cucumber
- 1 cup grated carrot
- 3 tbsp chopped onion
- 3 tbsp chopped capsicum
- 2 tbsp chopped coriander leaves
- Salt to taste
For tempering:
- 2 ½ tsp oil
- 1 tsp mustard seeds
- 2 tsp urad dal
- 2 tsp chana dal
- 2 red chillies
- 1/2 tsp hing
- 2 tbsp peanuts
- 2 green chillies, finely sliced
- 6-7 curry leaves
Method:
- Rinse the millet and cook it in a pot with 2 ½ cups of water for 15-20 minutes, checking occasionally. Cook on medium-low heat until done. Once cooked, set aside to cool.
- After cooling, slightly mash the millet with the back of a spoon or your hand. Add whisked curd, grated cucumber, grated carrot, chopped onion, chopped coriander leaves, and chopped capsicum. Mix well.
- Add milk and salt to the mixture and mix thoroughly. For a healthier version, you can substitute milk with buttermilk. Set aside.
- Heat oil in a pan and add mustard seeds. Once they splutter, add urad dal, chana dal, hing, peanuts, red chillies, green chillies, and curry leaves. Sauté for a few seconds until the ingredients are crisp.
- Pour the hot tempering into the millet curd rice mixture and mix well. Your Millet Curd Rice is ready to serve!
