Millets are increasingly becoming a popular choice for healthy eating thanks to their rich nutritional profile and multiple health benefits. A wholesome dish that highlights their goodness is millet masala khichdi, recently shared by Chef Kunal Kapoor. This recipe combines four types of millets with lentils and aromatic spices to create a filling and nutritious meal suitable for the whole family.

Chef Kunal’s version of masala khichdi is designed to be both simple and flavourful. The dish uses foxtail millet pearl millet sorghum and barnyard millet combined with moong dal masoor dal and toor dal. This combination ensures a rich intake of protein and fibre making it a complete meal in itself.
To prepare the dish the millets are thoroughly washed and cooked in a pressure cooker along with the lentils turmeric salt and water until soft and well blended. Meanwhile a tempering is prepared using ghee along with whole spices like mustard seeds cumin and dried red chillies. Aromatics such as onion ginger garlic and green chilli are sautéed to enhance the flavour followed by tomatoes and powdered spices.
Once the tempering is ready it is mixed into the cooked khichdi giving it a rich and comforting taste. The dish is finished with a squeeze of lemon kasoori methi and fresh coriander for added freshness and aroma. It can be served hot and pairs well with a side of yogurt or pickle.
