Ingredients (Serves 4)
- 1 cup spinach puree (palak)
- 1 cup semolina (sooji)
- 1/2 cup yogurt (dahi)
- 1 packet fruit salt
- Salt to taste
- 1/2 cup grated paneer
- 1/2 onion, finely chopped
- 1/2 tomato, finely chopped
- 1 tsp green chilies, finely chopped
- 1 tbsp coriander, finely chopped
- Water as needed
- Oil for cooking
Method
- In a bowl, combine semolina, yogurt, salt, and spinach puree to form a smooth batter. Adjust consistency by adding water if required and set aside.
- For the topping, mix onion, tomato, green chilies, coriander, paneer, and a pinch of salt in a small bowl.
- Dissolve fruit salt in a little water and add to the batter to make it light and fluffy.
- Heat a non-stick pan or griddle with a little oil. Pour a ladleful of batter and spread it evenly. Sprinkle the prepared topping on the uttapam and press gently.
- Cook on medium heat until the bottom is golden brown, then flip carefully to cook the other side.
- Serve hot with coconut chutney, tomato chutney, or any preferred dipping sauce.
- Repeat the process with the remaining batter and toppings to make additional uttapams.
