Ingredients:
- 1 cup rice
- 2 cups boiled chickpeas
- 1 finely chopped onion
- 2 chopped tomatoes
- Small piece of ginger
- 4-5 garlic cloves
- 2 finely chopped green chillies
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Fresh coriander for garnish
Method:
- Heat 2 tablespoons of oil in a pressure cooker and add cumin seeds until they splutter.
- Add green chillies, grated ginger, garlic, and chopped onion. Sauté until the onion turns light brown.
- Mix in turmeric, red chilli powder, coriander powder, and garam masala. Stir for 30 seconds, then add chopped tomatoes and cook for 2-3 minutes.
- Add rice, boiled chickpeas, and 2 cups of water. Seal the pressure cooker and cook for one whistle.
- Garnish with fresh coriander and optional paneer. Serve with Greek yogurt raita made with grated cucumber and carrot for a complete meal.
