Ingredients for Roasted Tomato Sardine Toast
1 cup cherry tomatoes
5 to 8 whole garlic cloves
Extra virgin olive oil
Salt and black pepper
Red pepper flakes optional
1 can sardines
Fresh dill chopped
Sourdough bread
Ghee or butter for toasting
Preparation Method
Start by preheating the oven to about 200 degrees Celsius. Place cherry tomatoes and garlic cloves in a baking dish and drizzle with olive oil then season with salt and pepper. Roast the mixture for around 20 to 25 minutes until the tomatoes soften and burst while the garlic becomes tender.
After removing the dish from the oven add the sardines and gently mash them together with the roasted tomatoes and garlic. Mix in fresh dill for extra flavour and nutrients.
Toast slices of sourdough bread in ghee or butter until crisp and golden. Spoon the warm tomato sardine mixture generously on top of the toast and add a light sprinkle of red pepper flakes if desired before serving.
