Slow-Roasted Lamb with Medley of Seasonal Vegetables: A Flavorful Feast for the Family

This recipe combines tender, marinated lamb with vibrant, oven-roasted vegetables, creating a feast that will tantalize your taste buds and impress your loved ones.

Ingredients:

  • 2.5 kg lamb
  • 80 gms zucchini
  • 80 gms potatoes
  • 100 gms red capsicum
  • 100 gms green capsicum
  • 100 gms yellow capsicum
  • 100 gms orange capsicum
  • 50 gms carrots
  • 15 gms garlic, chopped
  • 1 tbsp oregano
  • 1 tsp pepper powder
  • 2 tbsp Dijon mustard
  • 1 tbsp paprika
  • ½ lemon, juice
  • 2 tbsp olive oil
  • Salt to taste

Method:

  1. Marinate the Meat: Begin the preparation a day before cooking by marinating the lamb. Mix salt, pepper, ¾ tablespoon of oregano, and paprika in a large container. Rub this spice mix evenly over the lamb, cover it well, and refrigerate to allow the flavors to penetrate.
  2. Prepare Vegetables: Preheat the oven to 240°C. In a roasting pan, arrange the potatoes, zucchini, chopped onion, carrots, and capsicums. Season with salt and pepper.
  3. Blender Mixture: Blend olive oil, lemon juice, mustard, garlic, and the remaining oregano until smooth. Pour this mixture over the vegetables and add enough water to partially cover them.
  4. Roast the Lamb: Grease the oven’s grilling rack with oil and place the marinated lamb on it. Position the grilling rack over the roasting pan so the lamb juices drip onto the vegetables. Roast for 15 minutes, then reduce the oven temperature to 180°C. Continue cooking for 3 hours, ensuring the vegetables remain partially submerged in water.
  5. Final Touch: After 3 hours, check the lamb. It should be tender and slightly falling apart. To achieve a crispy and golden exterior, increase the oven temperature to 200°C and roast for a few more minutes.
  6. Rest and Serve: Allow the lamb to rest before carving. Serve the lamb on a large tray with the roasted vegetables and pour some of the flavorful juices from the roasting pan over the top.
