Ingredients:
- 400 gms paneer
- 1 tsp red chilli powder
- 1 tsp achari masala
- 1 tsp garam masala
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric
- 2 tsp lemon juice
- 1/2 tsp thick yogurt
- 1 tsp fennel seeds
- 1 tsp nigella seeds
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- Oil, as needed
- 1 onion, sliced
- 2-3 parathas
- Salt, to taste
Method:
- Begin by marinating the paneer with ginger-garlic paste, lemon juice, and salt. Let it sit for an hour.
- Dry roast the fennel, nigella, cumin, and mustard seeds in a pan. Blend them into a fine powder. Combine this powder with mustard oil, black salt, achari masala, and other dry spices to form a paste.
- Coat the marinated paneer with the spice paste and yogurt. Allow it to rest for another 30 minutes, then roast in the oven for 7-8 minutes.
- Warm a paratha on a tawa, spread pudina chutney on it, and place the marinated paneer pieces in the center. Add sliced onions and a sprinkle of lemon juice.
- Fold the paratha to form a roll, secure with a toothpick, and serve with chutney.
