  • 2 tsp ground coriander
  • 1 tsp turmeric

  • 500g tomatoes, roughly chopped
  • Handful of fresh coriander, chopped
  • 8 eggs
  • 100ml milk

How to Make Bombay-Style Potato Slices

  1. Boil the potatoes for about 8-10 minutes until tender, then drain and set aside.
  2. In a large frying pan, heat olive oil over medium heat and sauté the sliced onions for 15 minutes until golden and soft.
  3. Add minced garlic and ginger, cooking for another 2-3 minutes until aromatic.
  4. Stir in the red chili, mustard seeds, ground coriander, turmeric, cumin, and garam masala, letting the spices bloom in the oil for about a minute.
