Tired of the Same Breakfast? Try This Quick and Delicious Vermicelli Idli Recipe

Starting your morning with a delicious and nutritious breakfast can set the tone for the entire day. If your usual choices feel repetitive, it’s time to refresh your breakfast menu with a unique yet simple recipe—vermicelli idli. This dish is not only easy to prepare but also adds an interesting twist to traditional South Indian idlis. Packed with flavors and textures, it offers a light yet satisfying meal. However, as tempting as they are, it’s best to enjoy them in moderation to maintain a balanced diet.

Why Try Vermicelli Idli?

Unlike the regular idli, this recipe incorporates roasted vermicelli, adding a subtle crunch and richness. The combination of sooji (rava), yogurt, and aromatic tempering brings out a delicious taste, making it a great option for those looking for a quick, homemade, and wholesome breakfast.

Ingredients for Vermicelli Idli:

For the Idli Batter:

  • Sooji (rava) – 1 cup
  • Oil – 1 tsp
  • Vermicelli – ½ cup
  • Curd – 1 cup
  • Coriander leaves (finely chopped) – 2 tsps
  • Salt – To taste
  • Water – ½ cup
  • Baking soda – ½ tsp

For Tempering:

  • Oil – 2 tsps
  • Mustard seeds – 1 tsp
  • Urad dal – ½ tsp
  • Chana dal – ½ tsp
  • Hing (asafoetida) – A pinch
  • Green chilli (finely chopped) – 1
  • Ginger (finely chopped) – 1 inch
  • Curry leaves – Few
  • Haldi (turmeric powder) – ½ tsp

Other Ingredients:

  • Oil for greasing – 1 tsp
  • Cashews – 15

How to Make Vermicelli Idli:

  1. Dry roast the sooji on low heat until it turns aromatic. Set aside.
  2. In the same pan, roast vermicelli with 1 tsp oil until golden brown and crisp.
  3. Transfer the roasted ingredients to a bowl and add curd. Mix well.
  4. For tempering, heat 2 tsps oil and add mustard seeds, urad dal, chana dal, and hing.
  5. Add green chilies, ginger, and curry leaves. Stir in turmeric and cook until aromatic.
  6. Pour the tempering into the batter and mix well. Add chopped coriander leaves, salt, and water as needed.
  7. Let the batter rest for 20 minutes.
  8. Before steaming, add baking soda and stir until the batter becomes frothy.
  9. Grease idli plates with oil and pour in the batter immediately without letting it sit.
  10. Steam for 8-10 minutes on medium heat.
  11. Serve warm with sambar and coconut chutney for a delicious meal.

These soft and flavorful vermicelli idlis are perfect for a quick weekday breakfast or even a healthy evening snack.
