- Water – ½ cup
- Baking soda – ½ tsp
For Tempering:
- Oil – 2 tsps
- Mustard seeds – 1 tsp
- Urad dal – ½ tsp
- Chana dal – ½ tsp
- Hing (asafoetida) – A pinch
- Green chilli (finely chopped) – 1
- Ginger (finely chopped) – 1 inch
- Curry leaves – Few
- Haldi (turmeric powder) – ½ tsp
Other Ingredients:
- Oil for greasing – 1 tsp
- Cashews – 15
How to Make Vermicelli Idli:
- Dry roast the sooji on low heat until it turns aromatic. Set aside.
- In the same pan, roast vermicelli with 1 tsp oil until golden brown and crisp.
- Transfer the roasted ingredients to a bowl and add curd. Mix well.
- For tempering, heat 2 tsps oil and add mustard seeds, urad dal, chana dal, and hing.
- Add green chilies, ginger, and curry leaves. Stir in turmeric and cook until aromatic.
- Pour the tempering into the batter and mix well. Add chopped coriander leaves, salt, and water as needed.
- Let the batter rest for 20 minutes.
- Before steaming, add baking soda and stir until the batter becomes frothy.
