Ingredients:
- Pearl couscous – ½ cup
- Boiled potato (medium-sized) – 1, peeled and mashed
- Chopped onion – 1 small
- Fresh parsley – 2 tablespoons
- Dill leaves – 1 tablespoon, finely chopped
- Ginger-garlic paste – 1 teaspoon
- Red chilli flakes – 2 teaspoons
- Za’atar spice blend – 1.5 teaspoons
- Lemon juice – 1 tablespoon
- Salt – to taste
- All-purpose flour (maida) – 1 tablespoon
- Water – ¼ cup
- Bread crumbs – ½ cup
- Oil – for shallow frying
Instructions:
- Cook the couscous according to the package instructions and allow it to cool.
- In a large bowl, mix the couscous with mashed potato, onion, dill, parsley, ginger-garlic paste, chilli flakes, za’atar, lemon juice, and salt to form a sticky dough.
- Oil your hands and divide the dough into 8 equal portions. Flatten each into a round patty shape.
- Prepare a slurry by mixing maida and water. Dip each patty into this batter and coat with breadcrumbs.
- Arrange the tikkis on a baking sheet and refrigerate them for 2 hours to set.
- Heat oil in a non-stick pan and shallow fry the tikkis on both sides until they’re crispy and golden brown.
- Drain the excess oil on paper towels and serve hot with a dip of your choice.
