Featuring soft and juicy Bombay duck (locally known as Bombil), this preparation combines regional spices with fresh herbs, making it a must-try dish for seafood enthusiasts.

To begin, you’ll need six fresh Bombil fish, cleaned thoroughly and slit to remove the central bone. Marinate the fish with salt and lemon juice and set it aside for at least an hour. Make sure to drain all excess water from the Bombil after marination for the best results.

Next, prepare the aromatic stuffing using grated coconut, curry leaves, green chilies, fresh coriander, and ginger garlic paste. Mix everything well and gently stuff each Bombil with this flavorful mixture. Before stuffing, ensure the fish is patted dry using a tissue.
