250g fresh turmeric
2 to 3 slit green chillies
½ cup mustard oil
½ cup lemon juice
2 tablespoons salt
1 teaspoon turmeric powder
1½ tablespoons lightly crushed mustard seeds
1 teaspoon roasted crushed fenugreek seeds
½ teaspoon asafoetida

Method:
Wash and dry the fresh turmeric thoroughly ensuring no moisture remains then peel and slice it. Prepare the green chillies similarly and let both air dry for 30–60 minutes. Heat mustard oil until lightly smoking then let it cool. In a bowl combine salt mustard seeds fenugreek asafoetida and turmeric powder. Add the dried turmeric and chillies coating them fully. Mix in the lemon juice for tanginess and preservation. Pour in the cooled mustard oil and blend everything well. Transfer the mixture into a clean dry jar ensuring the oil covers the top.
