Ingredients:
- 400g drumsticks, strings removed and cut into 3-inch pieces
- Salt to taste
- 2 tbsp oil
- 1 inch ginger, roughly chopped
- 5–6 garlic cloves
- 1 medium onion, diced
- 1 medium tomato, quartered
- 2 tbsp chopped fresh coriander leaves
- Crushed black pepper to taste
- 1/2 tsp cumin powder
- Fresh coriander sprigs for garnish
Method:
- Pressure cook drumstick pieces with 3 cups of water and salt for 2–3 whistles.
- In a heated pan, sauté ginger, garlic, and onion until soft.
- Add tomato and cook for 3–4 minutes.
- Strain the drumsticks and keep the stock aside. Allow the cooked drumsticks to cool.
- Remove pulp from the drumsticks and add to the sautéed mixture.
- Add coriander, cumin, and crushed pepper. Pour in the reserved stock and bring to a boil.
- Blend the mixture into a smooth soup.
- Season with salt and pepper as needed.
- Serve hot with a garnish of fresh coriander and extra pepper.
