Additionally, distractions at school can lead to children skipping the nutritious parts of their lunch in favor of snacks. Recipes:

1. Spicy Masala Oats

Ingredients:

  • 2 cups rolled oats
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1-2 green chilies, finely chopped
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • Salt to taste
  • 1 teaspoon red chili powder
  • ¼ teaspoon turmeric powder
  • 2 tablespoons chopped fresh coriander leaves

Method:

  1. Heat oil in a pan, add cumin seeds until they change color.
  2. Add green chilies and onion, sauté until the onion is golden.
  3. Add tomato and salt, cook covered for 2-3 minutes.
  4. Mix in red chili powder and turmeric powder.
  5. Add rolled oats and 4 cups water, cook for 4-5 minutes. Stir in 1 tablespoon coriander leaves.
  6. Serve hot, garnished with the remaining coriander leaves.

2. Oats Dosa

Ingredients:

  • 1 cup split skinless black gram (urad dal), soaked for 2 hours and drained
  • 2 tablespoons Bengal gram (chana dal), soaked for 1 hour and drained
  • ¼ teaspoon fenugreek seeds (methi dana), soaked for 1 hour and drained
  • 1 cup oats
  • Oil for drizzling
  • Coconut chutney for serving

Method:

  1. Blend soaked black gram, Bengal gram, fenugreek seeds, oats, and 1 cup water to a fine paste. Ferment for 6-8 hours.
  2. Add salt and mix well.
  3. Heat a non-stick tawa. Pour a ladle of batter, spread into a disc, and drizzle with oil. Cook for 2 minutes, fold in half, and serve with coconut chutney.

3. Vegetable Oats Pancake

Ingredients:

  • 1 cup oats flour
  • ½ cup grated carrot
  • ½ cup finely chopped spinach
  • 2 tablespoons finely chopped coriander
  • 2 teaspoons finely chopped green chilies
  • Salt to taste
  • ½ teaspoon fruit salt
  • 1½ teaspoons oil for greasing and cooking

Method:

  1. Mix oats flour, carrot, spinach, coriander, green chilies, and 1 cup water to make a batter. Add fruit salt and water just before cooking.
  2. Heat a non-stick tava, grease with ¼ teaspoon oil.
  3. Pour a spoonful of batter, spread to form a 4-inch circle. Cook with ¼ teaspoon oil until light brown on both sides.
  4. Serve with dahiwali phudina ki chutney.
