Celebrate the Festive Season with Bhutan’s Beloved Crispy Sweet Khabsey

The holiday season is the perfect time to explore traditional treats from around the world, and Bhutan’s khabsey is a festive favourite worth trying at home. Khabsey also known as khabzay or khapzey is a deep-fried Bhutanese cookie that is closely linked with celebrations family gatherings and cultural rituals. These golden crispy snacks are especially popular during Losar the Tibetan New Year and other important festivals such as tshechu.

Prepared using simple pantry ingredients khabsey is both comforting and symbolic. In Bhutan these cookies are often shaped into decorative twists and loops sometimes called donkey ears and are enjoyed with tea or coffee. They are also placed as offerings on altars in Buddhist temples representing abundance and good fortune. Easy to make yet rich in tradition khabsey is a wonderful festive recipe to add to your holiday table.

Ingredients

All purpose flour 1000gm
Unsalted butter 200gm
Crystal sugar 350gm
Water 300ml

Method

Boil the water butter and sugar together until the sugar fully dissolves.
Add this mixture to the flour and knead until the dough becomes smooth and soft.
Cover and let the dough rest for 30 minutes.
Roll out the dough to medium thickness then cut and shape into traditional designs.
Deep fry until golden brown and crisp.
Cool and serve with tea or coffee.
