She explains that whole chia seeds already provide substantial health benefits but their tough outer shell can limit how much of their nutrients are fully absorbed. When the seeds are ground this outer layer is broken down allowing the body easier access to omega 3 fatty acids protein antioxidants and other beneficial compounds. This process increases bioavailability meaning the nutrients are more efficiently utilised by the body.
Another benefit of ground chia seeds lies in their water absorption capacity. Chia seeds are known for forming a gel like consistency when mixed with liquid due to their soluble fibre content. This gel supports hydration and helps promote smoother bowel movements. Ground chia seeds are believed to hold even more water than whole seeds which may further support hydration and digestive comfort.
From a gut health perspective ground chia seeds may also have an edge. Because they are easier to digest they can ferment more efficiently in the intestines which may lead to greater production of short chain fatty acids.
