One of the most loved festive dishes is Amritsari Kulcha served with spicy and tangy Chole. This classic Punjabi combination features a soft yet crispy stuffed bread filled with spiced potatoes, onions, coriander, and aromatic spices. It is traditionally cooked until golden and paired with chole, fresh onion salad, chutney, and lemon wedges, making it a complete and satisfying meal.

Over time, Amritsari Kulcha with Chole has become a staple during Baisakhi celebrations due to its ability to be easily shared among family members during festive lunches. The chickpeas in chole provide protein and fibre, while the stuffed kulcha delivers rich flavour and comfort.

Ingredients

For the Kulcha Dough
2 cups whole wheat flour
½ cup refined flour
½ cup curd
½ tsp baking powder
½ tsp salt
1 tsp oil
Water as needed

For the Stuffing
2 medium boiled potatoes mashed
1 small onion finely chopped
2 tbsp coriander leaves chopped
1 green chilli finely chopped
½ tsp cumin powder
½ tsp red chilli powder
½ tsp amchur powder
Salt to taste

For the Chole
1 cup boiled chickpeas
1 small onion chopped
1 tomato chopped
1 tsp ginger garlic paste
1 tsp chole masala
1 tsp oil
Salt to taste

Step-by-Step Method

Prepare a soft dough by mixing whole wheat flour refined flour curd baking powder salt oil and water. Let it rest for 20 minutes.
In a separate bowl mix mashed potatoes onion coriander green chilli cumin powder red chilli powder amchur and salt.
Divide dough and stuffing into equal portions then stuff and roll gently.
Cook the kulchas on a hot tawa using a little oil until golden and crisp on both sides.
For chole sauté onion tomato ginger garlic paste and spices then add chickpeas and cook for a few minutes.
Serve hot with onion slices lemon wedges and chutney.
