Apples are widely known for their health benefits, but according to Dr Karan Rajan, gently cooking them can make a noticeable difference. The process of stewing helps break down the fruit’s natural fibre, particularly pectin, making it easier for gut bacteria to process. This can lead to improved digestion and reduced bloating.
Pectin, a type of soluble fibre found in apples, acts as a prebiotic that nourishes beneficial gut microbes. When apples are eaten raw, the pectin structure is more complex and harder to break down. However, cooking softens these structures, allowing gut bacteria to ferment them more evenly, which may help prevent excessive gas production.
Another advantage of stewing apples is the reduction of fermentable sugars known as FODMAPs. These compounds can trigger digestive discomfort in some individuals. By lightly cooking apples, these sugars are partially broken down, making the fruit gentler on the digestive system.
