Quick and Easy 30-Minute Chicken Biryani Recipe for a Lazy Weekend Feast

Who said biryani had to be a time-consuming affair? This effortless 30-minute chicken biryani recipe is here to challenge that notion and make your weekends deliciously simple. Designed for those who prefer flavorful meals without spending hours in the kitchen, this one-pot ‘lazy weekend’ biryani serves up to six people and is perfect for a satisfying solo meal or a family treat.

This quick chicken biryani recipe uses simple ingredients and a fuss-free method. Begin by thinly slicing two to three onions and frying them until they’re crisp and golden brown. Set them aside. Wash and soak three cups of basmati rice with whole spices and a bay leaf. Meanwhile, dice two chicken breasts, two potatoes (cut into halves or quarters), and two tomatoes (finely chopped).

Heat oil in a thick-bottomed pan and sauté one tablespoon of ginger garlic paste along with five slit green chillies. Add the chopped tomatoes and cook until soft. Now, add the chicken, potatoes, two tablespoons of yoghurt, one pack of your favorite biryani masala, one teaspoon of salt, one teaspoon of red chilli powder, half a teaspoon of turmeric, half a cinnamon stick, and four green cardamoms. Sprinkle in some chopped mint and coriander, then cook everything for about 15 minutes so the spices blend perfectly with the meat and vegetables.

While the masala is cooking, boil the soaked rice until it’s 75% done. Once ready, layer it over the cooked chicken mixture. Add fried onions, more chopped mint and coriander, and three freshly chopped chillies. In a small bowl, mix a bit of biryani masala with butter and a pinch of food coloring, then drizzle this mixture over the rice. Seal the pot and let it cook on dum for 15 minutes.
