Here’s how you can make Yasmin Karachiwala’s healthy nachos at home:

Ingredients (Serves 3):

Base:

  • 1 large sweet potato
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Boiled or canned black or red beans
  • Cottage cheese (shredded)
  • Jalapeños (sliced)

Tomato Salsa:

  • 1 chopped tomato
  • 1 tablespoon finely chopped onion
  • 1 teaspoon lemon juice
  • Chopped fresh coriander
  • Salt and chili flakes to taste

Guacamole:

  • 1 ripe avocado
  • 1 teaspoon lemon juice
  • Optional chopped onion
  • Salt to taste
  • Chopped fresh coriander

Preparation Steps:

  1. Begin by slicing the sweet potato into thin rounds.
  2. Toss the slices in olive oil, then season with salt and pepper.
  3. Bake in a preheated oven at 175°C or 350°F for 20 minutes until they turn crisp.
  4. Once done, layer them with beans, cottage cheese, and sliced jalapeños.
